Basque Cooking Class

Marcelino Ugalde, Library Assistant in the Basque Studies Program, will be offering a class entitled “Introduction to Traditional Basque Cooking” during Spring 1993 through the Truckee Meadows Community College Community Services Program. Students in the class will learn to prepare bildotsa a la Navarra (lamb chops), bacalao a la bizkaina, bacalao al pil-pil, chipirones (squid), and porrusalda (potato-leek soup, among other delicacies.

Ugalde has been practicing the art of Basque cooking for many years. “The greatest influence on my cooking was my mother,” says Ugalde. “My paternal grandmother also cooked for Basque sheephands, and my sister Auriane studied Basque cooking in the Old Country at the Arzak Restaurant with the chef and owner. She has provided me with many great recipes. With all this family background, it’s no wonder that I love to cook, and I love to watch other people enjoy my cooking.”
